Removed own memberwise cast function, and replaced with one by jpmikkers. This needs converting to a recursion-less version and having the loop issue I think it has fixed

Further test on injecting. Injecting a callback to the constructor and capturing the instance that way seems to work.

Pulled Logs into new Log object

- Greatly simplifies Program.cs
- Removed the 'Colour' method so that logging is more consistent for users - willing to discuss this change. I believe it is beneficial.
